For use on fish, meat and fruit: The Classic Ikon 6” Fillet Knife, with its flexible blade is designed for wafer-thin filleting and preparing fish. The long fine blade is ideal for precision cutting of meat, loosening the fish fillet from the skin or peeling fruit.
Each Classic Ikon Knife is forged from a single block of High Carbon Stainless Steel and tempered to 58° Rockwell Hardness for lasting edge retention, integral blade strength, and ease of maintenance. The Precision Edge Technology (PEtec) yields a blade that is 20% sharper with twice the edge retention for a knife that will last a lifetime. Wash by hand only.
The knife’s black contoured handle rests comfortably in the hand while the small curvatures along the grip ensure a secure hold while prepping food. The handle is made from a highly durable synthetic material – Polyoxymethylene (POM) – which has a tighter molecular structure to resist fading and discoloration. The half bolster allows for the knife to be honed and sharpened the entire length of the blade while the heel bolster provides added balance.
