  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce

Instructions

1. Soak the Noodles

Place the rice noodles in warm water and soak according to the package instructions until just tender. Drain and set aside.

2. Prepare the Sauce

In a small bowl, whisk together the tamarind paste, fish sauce, brown sugar, soy sauce, and sriracha until the sugar has dissolved.

3. Cook the Protein

Heat the vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp, chicken, or tofu and cook until fully cooked. Transfer to a plate.

4. Build the Dish

In the same pan, sauté the shallot and garlic for about 1 minute. Push them to one side, pour in the beaten eggs, and gently scramble until just set.
