Easy Homemade Chicken Alfredo

This Chicken Alfredo combines juicy pan-seared chicken with a simple homemade sauce made from butter, cream, garlic, and freshly grated Parmesan.

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste

For the Alfredo:

  • 12 oz fettuccine
  • 4 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 ½ cups freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • ¼ cup reserved pasta water, as needed
  • Fresh parsley, for garnish

Instructions

1. Season the Chicken

Pat the chicken dry and season both sides with garlic powder, Italian seasoning, paprika, salt, and black pepper.

2. Cook the Chicken

Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for approximately 5–7 minutes per side, depending on thickness, until golden and the internal temperature reaches 165°F (74°C).

Transfer the chicken to a cutting board and let it rest before slicing.

3. Cook the Pasta

Bring a large pot of generously salted water to a boil. Cook the fettuccine according to the package directions until al dente.

Before draining, reserve about ½ cup of pasta water.

4. Make the Alfredo Sauce

Reduce the skillet to medium-low heat and melt the butter. Add the garlic and cook for about 30 seconds until fragrant.

Pour in the heavy cream and gently simmer for 2–3 minutes. Reduce the heat to low and gradually stir in the Parmesan until melted and smooth.

5. Toss the Pasta

Add the cooked fettuccine directly to the sauce and toss until evenly coated. Add a splash of reserved pasta water as needed to loosen the sauce and create a silky consistency.

6. Add the Chicken

Slice the rested chicken and arrange it over the creamy fettuccine.

7. Garnish & Serve

Finish with freshly grated Parmesan, cracked black pepper, and chopped parsley. Serve immediately while the sauce is warm and creamy.

Why This Recipe Works

Freshly grated Parmesan melts smoothly into the butter and cream, creating a rich sauce that clings beautifully to the fettuccine. Pan-searing the chicken separately gives it a flavorful golden crust while keeping the inside juicy and tender.

Tips for the Best Chicken Alfredo

  • Use freshly grated Parmesan instead of pre-shredded cheese for a smoother sauce.
  • Keep the sauce at a gentle heat to prevent it from separating.
  • Save some pasta water to adjust the sauce consistency.
  • Let the chicken rest before slicing to keep it juicy.
  • Serve immediately since Alfredo sauce thickens as it cools.
