Healthy & Simple Cabbage Soup Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups green cabbage, shredded
  • 1 can diced tomatoes (14 oz)
  • 6 cups vegetable broth (or chicken broth)
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: fresh parsley for garnish

Instructions

  1. Heat the oil
     In a large pot, heat olive oil over medium heat.

  2. Sauté the aromatics
     Add diced onion and cook for about 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.

  3. Add vegetables
     Add carrots, celery, and cabbage. Stir and cook for about 5 minutes until the cabbage begins to soften.

  4. Add broth and tomatoes
     Pour in the vegetable broth and diced tomatoes. Stir well.

  5. Season the soup
     Add paprika, thyme, salt, and pepper. Bring the soup to a boil.

  6. Simmer
     Reduce heat and let the soup simmer for 20–25 minutes until the vegetables are tender.

  7. Serve
     Taste and adjust seasoning. Garnish with fresh parsley if desired and serve warm.
