Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1 ½ cups fresh or frozen blueberries
  • 1 tbsp flour (for coating blueberries)
  • Optional: coarse sugar for topping

Instructions

1. Preheat & Prepare

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease each cup.

2. Mix the Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. Combine the Wet Ingredients

In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth.

4. Make the Batter

Pour the wet ingredients into the dry ingredients and gently mix until just combined. Toss the blueberries with 1 tablespoon of flour and carefully fold them into the batter.

5. Fill & Bake

Divide the batter evenly among the muffin cups, filling each about three-quarters full. Sprinkle with coarse sugar if desired.

Bake for 20–25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

6. Cool & Enjoy

Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm or at room temperature.
