Classic Blueberry Scones 🫐

Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup cold unsalted butter, cubed
  • ½ cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1 tbsp coarse sugar (optional, for topping)

Optional Lemon Glaze

  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

1. Preheat & Prepare

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Mix the Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

3. Cut in the Butter

Add the cold cubed butter and work it into the flour mixture using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

4. Add the Wet Ingredients

Whisk together the heavy cream, egg, and vanilla extract. Pour into the dry ingredients and gently stir until the dough just comes together.

5. Fold in the Blueberries

Carefully fold the blueberries into the dough, being careful not to overmix.

6. Shape the Dough

Transfer the dough onto a lightly floured surface and gently shape it into a 1-inch thick circle. Cut into 8 equal wedges and place them on the prepared baking sheet. Sprinkle with coarse sugar if desired.

7. Bake

Bake for 18–22 minutes, or until the tops are lightly golden and the scones are cooked through.

8. Cool & Glaze

Allow the scones to cool slightly before serving. If using the lemon glaze, whisk together the powdered sugar, lemon juice, and zest, then drizzle over the warm scones.
