Homemade Crab Cakes

Homemade Crab Cakes

Crispy on the outside, tender on the inside, and packed with sweet lump crab meat, homemade crab cakes are a seafood favourite that's surprisingly simple to make. Lightly seasoned and pan-seared until golden brown, they're perfect as an appetizer, a main course, or served in sandwiches with a fresh salad. The secret to great crab cakes is using just enough binder to hold everything together while letting the delicate flavour of the crab shine.

Classic Homemade Crab Cakes

This easy recipe combines lump crab meat with fresh herbs, breadcrumbs, and a touch of Dijon mustard for perfectly balanced crab cakes with a crisp, golden crust.

Ingredients

  • 1 lb lump crab meat, picked over for shells
  • ½ cup panko breadcrumbs
  • ¼ cup mayonnaise
  • 1 large egg
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp lemon juice
  • 2 tbsp fresh parsley, finely chopped
  • 2 green onions, finely sliced
  • ½ tsp Old Bay seasoning
  • ¼ tsp black pepper
  • 2 tbsp vegetable oil or butter (for frying)
  • Lemon wedges, for serving

Instructions

1. Prepare the Mixture

In a large mixing bowl, combine the mayonnaise, egg, Dijon mustard, Worcestershire sauce, lemon juice, Old Bay seasoning, and black pepper until smooth.

2. Fold in the Crab

Add the crab meat, breadcrumbs, parsley, and green onions. Gently fold everything together, being careful not to break up the large pieces of crab.

3. Shape the Crab Cakes

Divide the mixture into 6–8 equal portions and gently form into patties. Refrigerate for 20–30 minutes to help them hold their shape while cooking.

4. Cook Until Golden

Heat the oil or butter in a large skillet over medium heat. Cook the crab cakes for 4–5 minutes per side, or until golden brown and heated through.

5. Serve

Serve immediately with fresh lemon wedges, tartar sauce, remoulade, or a crisp green salad for a complete meal.

Why This Recipe Works

Using lump crab meat gives the cakes a delicate, flaky texture while keeping the seafood flavour front and centre. A small amount of breadcrumbs and egg provides just enough structure without making the cakes dense. Chilling the patties before cooking helps them stay together, while pan-searing creates a crisp exterior that contrasts beautifully with the tender interior.

Tips for the Best Crab Cakes

  • Use lump or jumbo lump crab meat for the best flavour and texture.
  • Refrigerate the patties before cooking to prevent them from falling apart.
  • Handle the mixture gently to keep large pieces of crab intact.
  • Cook over medium heat to achieve an even golden crust without burning.
  • Fresh lemon juice brightens the flavour just before serving.
  • Leftover crab cakes can be refrigerated for up to 3 days and reheated in a skillet or oven.
