Homemade Italian Salad Dressing

Homemade Italian Salad Dressing

Bright, zesty, and packed with herb flavor, homemade Italian salad dressing is an easy way to elevate everyday salads. Made with olive oil, red wine vinegar, garlic, Dijon mustard, and a blend of Italian herbs, this versatile dressing comes together in minutes and tastes far fresher than most store-bought options.

Drizzle it over green salads, pasta salad, grilled vegetables, or use it as a marinade for chicken and other proteins.

Easy Homemade Italian Dressing

This classic vinaigrette balances tangy vinegar, rich olive oil, and savory herbs for a dressing that’s simple, flavorful, and easy to customize.

Ingredients

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey or sugar
  • 2 cloves garlic, finely minced
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp dried parsley
  • ¼ tsp red pepper flakes, optional
  • ½ tsp salt, or to taste
  • ¼ tsp freshly ground black pepper
  • 2 tbsp finely grated Parmesan cheese, optional

Instructions

1. Prepare the Ingredients

Finely mince the garlic and measure out the herbs, vinegar, lemon juice, and olive oil.

2. Combine the Flavor Base

In a medium bowl or jar, combine the red wine vinegar, lemon juice, Dijon mustard, honey, garlic, oregano, basil, parsley, red pepper flakes, salt, and black pepper.

Whisk or shake until the ingredients are well combined.

3. Add the Olive Oil

Slowly drizzle in the olive oil while whisking continuously to create a smooth, lightly emulsified dressing.

If using a jar, add the oil, seal tightly, and shake vigorously until combined.

4. Add Parmesan

If desired, stir in the grated Parmesan cheese for an extra savory, slightly creamy finish.

5. Taste & Adjust

Taste the dressing and adjust the seasoning. Add more vinegar or lemon juice for extra tang, a little honey for sweetness, or more olive oil for a milder flavor.

6. Serve or Store

Use immediately or refrigerate in an airtight container. Shake or whisk again before serving, as the oil and vinegar may naturally separate.

Why This Recipe Works

The olive oil provides a rich, smooth base while red wine vinegar and lemon juice add brightness and acidity. Dijon mustard helps the oil and vinegar combine, while garlic and dried herbs create the familiar savory flavor of Italian dressing.

A small amount of honey balances the acidity without making the dressing overly sweet, and optional Parmesan adds extra depth.

Tips for the Best Italian Salad Dressing

  • Use good-quality olive oil since its flavor is a major part of the dressing.
  • Adjust the acidity to suit your taste by adding more or less vinegar.
  • Let the dressing rest for 15–30 minutes to allow the dried herbs to hydrate and the flavors to develop.
  • Shake before serving because homemade vinaigrettes naturally separate.
  • Use it beyond salads as a marinade for grilled vegetables, chicken, or pasta salad.
  • Store refrigerated and use within about one week for the best freshness.
