Easy Homemade Lasagna Soup

Prep Time: 15 minutes Cook Time: 30 minutes Total Time: 45 minutes Servings: 6

Ingredients

For the Soup:

  • ½ lb ground beef
  • ½ lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes, optional
  • 8 lasagna noodles, broken into pieces
  • Salt and black pepper, to taste
  • Fresh basil, for garnish

For the Cheese Topping:

  • ¾ cup ricotta cheese
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley

Instructions

1. Brown the Meat

Heat olive oil in a large Dutch oven over medium heat. Add the ground beef and Italian sausage.

Cook for 5–7 minutes, breaking the meat into small pieces until browned. Drain excess grease if necessary.

2. Sauté the Aromatics

Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and tomato paste, cooking for another minute until fragrant.

3. Build the Soup Base

Pour in the crushed tomatoes and broth. Add Italian seasoning, red pepper flakes, salt, and black pepper.

Stir well and bring to a gentle boil.

4. Cook the Lasagna Noodles

Add the broken lasagna noodles directly to the soup.

Reduce the heat and simmer for 12–15 minutes, stirring occasionally, until the noodles are tender. Add extra broth if the soup becomes too thick.

5. Prepare the Cheese Topping

In a small bowl, combine ricotta, mozzarella, Parmesan, and parsley until evenly mixed.

6. Serve

Ladle the hot lasagna soup into bowls. Add a generous spoonful of the cheese mixture and finish with fresh basil.

Serve immediately with garlic bread or a simple side salad.

Why This Recipe Works

Browning the beef and Italian sausage creates a rich, savory base, while crushed tomatoes and Italian seasonings deliver the familiar flavors of traditional lasagna.

Cooking the noodles directly in the broth allows them to absorb flavor, while the ricotta, mozzarella, and Parmesan topping adds the creamy, cheesy finish that makes lasagna so satisfying.

Tips for the Best Lasagna Soup

  • Use both beef and Italian sausage for a richer flavor.
  • Break noodles into bite-sized pieces for easier serving.
  • Stir occasionally to prevent the pasta from sticking.
  • Add extra broth if the soup thickens too much.
  • Cook pasta separately for meal prep to prevent it from becoming overly soft during storage.
  • Use freshly grated Parmesan for the best cheese topping.
  • Garnish with fresh basil for a bright, aromatic finish.
