Ingredients

  • 12 mozzarella string cheese sticks
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 1½ cups Italian-style breadcrumbs
  • ½ cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Vegetable or canola oil, for frying
  • Marinara sauce, for serving

Instructions

1. Prepare the Mozzarella

Cut each mozzarella stick in half crosswise to create 24 smaller pieces.

Pat the cheese dry with paper towel to help the coating stick properly.

2. Prepare the Breading Station

Place the flour in one shallow bowl.

In a second bowl, whisk together the eggs and milk.

In a third bowl, combine the Italian breadcrumbs, panko, Parmesan, garlic powder, oregano, basil, paprika, salt, and black pepper.

3. Bread the Mozzarella

Coat each mozzarella stick in flour and shake off the excess.

Dip it into the egg mixture, then completely coat it with the breadcrumb mixture.

For a stronger crust, dip it into the egg mixture a second time and coat it again with breadcrumbs.

4. Freeze the Mozzarella Sticks

Arrange the breaded mozzarella sticks on a parchment-lined baking sheet.

Freeze for at least 1–2 hours, or until completely firm.

5. Heat the Oil

Add several inches of oil to a deep, heavy-bottomed pot and heat to 350°F (175°C).

6. Fry Until Golden

Working in small batches, carefully lower the frozen mozzarella sticks into the hot oil.

Fry for approximately 1–2 minutes, or until the breading is crisp and golden brown.

Avoid overcrowding the pot, as this can cause the oil temperature to drop.

7. Drain

Remove the mozzarella sticks using a slotted spoon or spider strainer and transfer them to a wire rack or paper towel-lined tray.

Allow them to rest briefly before serving.

8. Serve

Serve the mozzarella sticks while they're still hot and the cheese is melted.

Pair with warm marinara sauce and finish with grated Parmesan or fresh parsley if desired.
