Ingredients

  • 1½ cups rolled oats
  • ½ cup pumpkin purée
  • ½ cup peanut butter or almond butter
  • ½ cup vanilla protein powder
  • ¼ cup maple syrup or honey
  • 2 tbsp ground flaxseed
  • 1 tbsp chia seeds
  • 1½ tsp pumpkin spice
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ cup mini chocolate chips, optional
  • ¼ cup chopped pecans or walnuts, optional

Instructions

1. Prepare the Oats

Add the rolled oats to a food processor and pulse several times until they are broken down into a coarse flour.

You don't need to completely pulverize them. Leaving some texture will give the protein balls a more satisfying bite.

2. Add the Wet Ingredients

Add the pumpkin purée, peanut or almond butter, maple syrup, and vanilla to the food processor.

Process until the ingredients begin to come together.

3. Add the Protein & Spices

5. Chill the Mixture

Transfer the mixture to the refrigerator for approximately 20–30 minutes.

6. Roll Into Balls
