Homemade Spicy Pickles & Peppers

Ingredients

For the Pickles & Peppers:

  • 3–4 small cucumbers, thinly sliced
  • 2 jalapeño peppers, sliced
  • 1 serrano pepper, sliced, optional for extra heat
  • ½ small red onion, thinly sliced
  • 3 cloves garlic, lightly crushed
  • 2 tbsp fresh dill

For the Brine:

  • 1 cup white vinegar
  • 1 cup water
  • 1 tbsp kosher or pickling salt
  • 1 tbsp granulated sugar
  • 1 tsp black peppercorns
  • ½ tsp mustard seeds
  • ½ tsp red pepper flakes

 

Instructions

1. Prepare the Vegetables

Wash the cucumbers and peppers thoroughly. Slice the cucumbers into rounds or spears and thinly slice the peppers and red onion.

For less heat, remove the seeds and membranes from the peppers before slicing.

2. Fill the Jars

Divide the cucumbers, peppers, red onion, garlic, and fresh dill between clean jars or airtight containers.

Pack everything snugly without crushing the vegetables.

3. Make the Brine

Add the vinegar, water, salt, sugar, peppercorns, mustard seeds, and red pepper flakes to a small saucepan.

Bring the mixture to a gentle simmer, stirring until the salt and sugar have completely dissolved.

4. Add the Brine

Carefully pour the warm brine over the cucumbers and peppers until they are completely submerged.

Allow the jars to cool to room temperature before covering.

5. Refrigerate

Seal the containers and refrigerate for at least 24 hours before serving. The flavor will become stronger as the vegetables continue to sit in the brine.
