Homemade Sweet Potato Pie

Homemade Sweet Potato Pie

Smooth, creamy, and filled with warm spices, homemade sweet potato pie is a classic comfort dessert that's perfect for fall gatherings, Thanksgiving, Christmas, or Sunday dinner. Roasted sweet potatoes are blended with brown sugar, butter, vanilla, cinnamon, and nutmeg before being baked in a flaky crust until perfectly set.

The result is a rich but balanced pie with natural sweetness from the sweet potatoes and a silky filling that pairs perfectly with freshly whipped cream.

Classic Sweet Potato Pie

Roasting the sweet potatoes instead of boiling them helps concentrate their natural sweetness and prevents excess water from making the filling too loose.

Ingredients

For the Filling:

  • 2 medium-large sweet potatoes, about 2 cups mashed
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • ½ cup evaporated milk
  • 1 tsp vanilla extract
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • ½ tsp salt

For the Pie:

  • 1 unbaked 9-inch pie crust
  • Whipped cream, for serving
  • Ground cinnamon or nutmeg, optional

Instructions

1. Roast the Sweet Potatoes

Preheat the oven to 400°F (200°C).

Wash the sweet potatoes and pierce them several times with a fork.

Roast for approximately 45–60 minutes, depending on their size, until completely tender when pierced with a knife.

Allow them to cool enough to handle.

2. Prepare the Sweet Potato

Remove and discard the skins.

Place the sweet potato flesh in a large bowl and mash until smooth. Measure approximately 2 cups for the filling.

For an especially smooth filling, process the sweet potato briefly with a hand mixer or food processor.

3. Make the Filling

Reduce the oven temperature to 350°F (175°C).

Add the melted butter, brown sugar, and granulated sugar to the mashed sweet potato. Mix until well combined.

Add the eggs, evaporated milk, vanilla, cinnamon, nutmeg, ginger, cloves, and salt.

Beat until the filling is completely smooth and creamy.

4. Prepare the Crust

Place the unbaked pie crust into a 9-inch pie pan and gently press it against the bottom and sides.

Trim and crimp the edges as desired.

Keep the crust chilled until you're ready to add the filling.

5. Fill the Pie

Pour the sweet potato mixture into the prepared crust.

Use a spatula to gently smooth the surface into an even layer.

6. Bake

Bake at 350°F (175°C) for approximately 50–60 minutes.

The outer portion of the filling should be set while the center still has a slight jiggle.

If the crust begins browning too quickly, loosely cover the edges with aluminum foil.

7. Cool Completely

Transfer the pie to a wire rack and allow it to cool for at least 2–3 hours.

The filling will continue to set as it cools, so avoid slicing it immediately after baking.

8. Serve

Slice the cooled sweet potato pie and serve at room temperature or slightly chilled.

Finish with whipped cream and a light sprinkle of cinnamon or nutmeg if desired.

Why This Recipe Works

Roasting sweet potatoes concentrates their natural sugars while creating a deeper flavor than boiling. Their naturally creamy texture also gives the filling plenty of body without requiring large amounts of dairy.

Brown sugar adds caramel-like notes, while cinnamon, nutmeg, ginger, and cloves provide warmth without overpowering the sweet potato.

Evaporated milk creates a smooth, rich consistency, while the eggs provide enough structure for the filling to set properly as it bakes and cools.

Tips for the Best Sweet Potato Pie

  • Roast instead of boil the sweet potatoes for a richer flavor and less excess moisture.
  • Mash the potatoes thoroughly for a smooth filling.
  • Use room-temperature ingredients to help everything combine evenly.
  • Don't overbake the pie since the center will continue setting as it cools.
  • Keep the crust chilled before adding the filling.
  • Adjust the spices depending on how pronounced you want the cinnamon and nutmeg flavors.
  • Allow the pie to cool completely before slicing for cleaner portions.
  • Serve with freshly whipped cream to balance the warm spices and rich filling.
