Homemade Teriyaki Sauce

Homemade Teriyaki Sauce

Sweet, savory, and perfectly glossy, homemade teriyaki sauce is a versatile kitchen staple that brings bold flavor to everyday meals. Made with soy sauce, mirin, sake, and sugar, this classic Japanese-inspired sauce creates a delicious balance of salty and sweet flavors. Use it to glaze chicken, salmon, beef, tofu, or vegetables, or drizzle it over rice bowls and stir-fries.

Easy Homemade Teriyaki Sauce

This simple teriyaki sauce uses four main ingredients and can be prepared in just minutes. The sauce reduces into a rich, glossy glaze that clings beautifully to your favorite proteins and vegetables.

Ingredients

  • ½ cup soy sauce
  • ½ cup mirin
  • ½ cup sake
  • ¼ cup granulated sugar

Optional Additions:

  • 1 tsp freshly grated ginger
  • 1 clove garlic, finely minced
  • 1 tsp cornstarch mixed with 1 tbsp cold water, for a thicker sauce

Instructions

1. Combine the Ingredients

Add the soy sauce, mirin, sake, and sugar to a small saucepan. If using ginger or garlic, add them at this stage.

2. Dissolve the Sugar

Place the saucepan over medium heat and stir until the sugar has completely dissolved.

3. Simmer the Sauce

Bring the mixture to a gentle simmer, then reduce the heat to medium-low.

Cook for approximately 10–15 minutes, stirring occasionally, until the sauce has reduced slightly and developed a glossy consistency.

4. Adjust the Thickness

For a traditional teriyaki glaze, allow the sauce to reduce naturally. It will thicken further as it cools.

If you prefer a thicker, restaurant-style sauce, whisk in the optional cornstarch slurry and simmer for another 1–2 minutes until thickened.

5. Taste & Adjust

Taste the sauce and adjust to your preference. Add a little more sugar for sweetness or a splash of water if the sauce becomes too concentrated.

6. Serve or Store

Use the sauce immediately to glaze cooked proteins or vegetables, or allow it to cool before transferring it to an airtight container.

Store refrigerated for up to one week.

Why This Recipe Works

Teriyaki sauce is built around a balance of soy sauce, mirin, sake, and sugar. Soy sauce provides savory depth, mirin adds sweetness and a subtle richness, while sake contributes complexity. As the mixture simmers, the sugar dissolves and the liquid reduces, creating a glossy sauce that coats food beautifully.

The result is a versatile glaze that can be used during cooking or added as a finishing sauce.

Tips for the Best Homemade Teriyaki Sauce

  • Use good-quality soy sauce for a balanced savory flavor.
  • Simmer gently to prevent the sugar from burning.
  • Avoid over-reducing because the sauce will continue to thicken as it cools.
  • Add ginger or garlic for a more aromatic variation.
  • Brush onto proteins near the end of cooking to prevent the sugars from burning over high heat.
  • Use a cornstarch slurry only if needed for a thicker sauce without reducing it further.
