Homemade Zucchini Bread

Moist, lightly spiced, and packed with fresh zucchini, homemade zucchini bread is a delicious way to turn a simple garden vegetable into a comforting baked treat. The zucchini keeps the loaf incredibly tender without overpowering the flavour, while warm cinnamon and vanilla create a rich, homemade aroma. Perfect for breakfast, an afternoon snack, or dessert, this classic loaf is easy to make and stays moist for days.

Classic Homemade Zucchini Bread

This easy recipe combines freshly grated zucchini with warm spices and a soft, buttery batter to create a loaf that's perfectly moist with a beautifully golden crust.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 large eggs
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 2 cups grated zucchini (lightly squeezed dry)
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup semi-sweet chocolate chips (optional)

Instructions

1. Prepare the Oven

Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.

2. Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.

3. Combine the Wet Ingredients

In a large bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla until smooth.

4. Fold Everything Together

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated zucchini, followed by the walnuts or chocolate chips if using.

5. Bake

Transfer the batter to the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the centre comes out clean.

6. Cool and Slice

Allow the bread to cool in the pan for 10–15 minutes before transferring it to a wire rack to cool completely. Slice and enjoy on its own or with butter.

Why This Recipe Works

Fresh zucchini adds moisture to the batter without making the bread heavy, resulting in a soft, tender crumb that stays fresh for days. The combination of cinnamon and nutmeg provides warm, comforting flavour, while brown sugar adds a subtle richness. Gently mixing the batter helps prevent overdeveloping the gluten, ensuring every slice remains light and moist.

Tips for the Best Zucchini Bread

  • Lightly squeeze excess moisture from the grated zucchini, but don't dry it completely.
  • Avoid overmixing the batter to keep the loaf soft and tender.
  • Add chopped nuts or chocolate chips for extra flavour and texture.
  • Let the bread cool completely before slicing for cleaner cuts.
  • Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
  • For extra flavour, sprinkle coarse sugar over the top before baking for a lightly crisp crust.
