Ingredients

For the Chicken:

  • 1½ lbs boneless, skinless chicken breasts or thighs
  • 2 tbsp hot honey
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tbsp adobo sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper, to taste

For the Bowls:

  • 3 cups cooked jasmine or brown rice
  • 1 avocado, sliced
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • ¼ cup sliced red onion
  • Fresh cilantro, chopped
  • Lime wedges for serving

Instructions

1. Marinate the Chicken

In a bowl, whisk together the hot honey, chipotle peppers, adobo sauce, olive oil, garlic, smoked paprika, chili powder, cumin, salt, and pepper. Coat the chicken thoroughly and let it marinate for at least 30 minutes, or up to overnight.

2. Cook the Chicken

Heat a large skillet or grill pan over medium-high heat. Cook the chicken for 5–7 minutes per side, or until it reaches an internal temperature of 165°F (74°C). Let it rest for 5 minutes before slicing.

3. Prepare the Bowl

Divide the cooked rice among serving bowls. Arrange the corn, black beans, cherry tomatoes, avocado, and red onion around the rice.

4. Assemble

Slice the chicken and place it on top of each bowl. Drizzle with any remaining hot honey sauce if desired.

5. Garnish & Serve

Top with fresh cilantro and serve with lime wedges for an extra burst of freshness.
