Instructions

  1. Preheat oven
     Set oven to 350°F (175°C) and line a muffin tin with cupcake liners.

  2. Mix dry ingredients
     In a bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Cream butter and sugar
    In a large mixing bowl, use a stand mixer or hand mixer to cream butter and sugar until light and fluffy.

  4. Add eggs and flavorings
     Beat in eggs, vanilla, and lemon zest until fully combined.

  5. Combine wet and dry ingredients
     Alternately add the flour mixture and buttermilk, starting and ending with flour, mixing until smooth.

  6. Fold in berries
     Gently fold in raspberries and blueberries so they don’t break.

  7. Fill cupcake liners
     Spoon batter into liners, filling about 3/4 full.

  8. Bake
     Bake 18–22 minutes, or until a toothpick comes out clean. Let cupcakes cool completely.

  9. Glaze and decorate
     Whisk powdered sugar with lemon juice until smooth and drizzle over cooled cupcakes. Top with extra berries or edible flowers if desired.
