The Vulcan combi oven offers a variety of capabilities including baking, steaming, roasting, grilling, air-frying, rethermalizing, proofing, finishing, poaching, stewing, low temp, defrosting, cook & hold, and much more. It features a twin control system with an easy-to-use LCD touchscreen and a turn/push knob for maximum control over the cooking process. The appliance also has both manual and automatic modes that enable operators to choose from preloaded and programmable recipes with picture or text displays. The AUTO mode comes with several options including "My Recipes," "My Favorites," Multi-Level Shelf Timers, and Multi-Product functions. The exclusive grab-and-go racks have a cut-out design that makes cooking more convenient. The appliance's cleaning system is easy to use, with water recirculation and an auto delime function. The appliance has a temperature range of 80-482°F, and a continuous timer that tracks up to 99:00 hours and minutes and displays the set, remaining or count time. It has an Auto-reversing fan with speed control adjustment, and an audible alarm system paired with flashing LED lights that alert you when the cooking cycle ends. The appliance also comes with helpful PC software to facilitate data collection, transfer of recipes, photographs, and profiles via USB.
