Ingredients

  • For the Crust:

    • 1 1/4 cups gluten-free all-purpose flour (or regular flour)

    • 1/4 cup sugar

    • 1/2 cup cold butter, cubed

    • 1/4 tsp salt

    • 4–5 tbsp cold water

  • For the Filling:

    • 1 can (15 oz) pumpkin puree

    • 3/4 cup sugar

    • 1 tsp cinnamon

    • 1/2 tsp nutmeg

    • 1/2 tsp ginger

    • 1/4 tsp cloves

    • 1/2 tsp salt

    • 3 eggs

    • 1 can (12 oz) evaporated milk

Instructions

1. Make the Crust:
Preheat the oven to 425°F (220°C). In a bowl, mix flour, sugar, and salt. Cut in cold butter until it resembles coarse crumbs. Gradually add cold water until a dough forms. Roll out and place in a 9-inch pie pan. Poke holes in the bottom with a fork.

2. Pre-bake the Crust:
Bake the crust for 10 minutes, then let it cool slightly.

3. Prepare the Filling:
In a large bowl, combine pumpkin puree, sugar, cinnamon, nutmeg, ginger, cloves, and salt. Add eggs one at a time, mixing well after each. Gradually stir in evaporated milk until smooth.

4. Assemble the Pie:
Pour the pumpkin filling into the pre-baked crust.

5. Bake:
Bake for 15 minutes at 425°F, then reduce the temperature to 350°F (175°C) and bake for an additional 35–40 minutes, or until set.

6. Cool and Serve:
Let the pie cool before slicing. Serve with whipped cream for an extra treat!
