Ingredients

  • 2 ripe-yet-firm mangoes, julienned
  • 1 medium carrot, julienned
  • ½ red bell pepper, thinly sliced
  • ¼ red onion, thinly sliced
  • ¼ cup chopped cilantro
  • ¼ cup chopped mint or Thai basil (optional)
  • 1 red chili or Thai bird’s eye chili, thinly sliced (adjust to taste)
  • 2 tbsp roasted peanuts or cashews, chopped
  • Optional: sliced cucumber or green mango for more tang

Dressing

  • 2 tbsp fresh lime juice
  • 1 tbsp fish sauce (or soy sauce for vegetarian)
  • 1 tsp sugar or honey
  • 1 tsp sesame oil
  • 1 minced garlic clove

Instructions

Prep the Mango: Peel and julienne your mangoes into thin matchstick-sized pieces. If too ripe, slice carefully to maintain shape.

Mix the Dressing: Whisk together lime juice, fish sauce, sugar, sesame oil, and garlic in a small bowl.

Assemble the Salad: In a large bowl, toss mango, carrot, bell pepper, onion, herbs, and chili.

Dress & Finish: Pour the dressing over the salad and toss to coat evenly. Garnish with chopped nuts and serve chilled or at room temperature.

Serving Tip: Let the salad sit for 5–10 minutes to allow flavours to mingle before serving.
