Making your own sausages at home is easier than you think—especially when you have a meat grinder on hand. This simple and customizable recipe allows you to control every element, from the meat to the seasoning. What You’ll Need:

  • Meat grinder (manual or electric)
  • Pork shoulder (or any preferred meat like beef or chicken)
  • Sausage casings
  • Seasonings (salt, pepper, garlic, paprika, herbs, etc.)
  • Ice or ice water (to keep the mixture cool)
  • Mixing bowl
  • Sharp knife

Step 1: Prepare the Meat
Start by cutting your meat into small chunks, about 1 to 2 inches, so it fits easily into the grinder. Fatty cuts like pork shoulder work best for sausages, but you can also mix in leaner cuts if preferred. If you want a more flavorful sausage, adding pork fatback is a great option.

Step 2: Grind the Meat
Feed the meat into the grinder, working in batches. Grind once for a coarse texture or twice for a finer consistency. Keep the mixture cold by placing it in the fridge or adding ice as you grind. This helps the fat bind with the meat and ensures a smoother texture.

Step 3: Season the Mixture
Transfer the ground meat to a large mixing bowl. Add your seasonings—salt, pepper, garlic, herbs—whatever flavor profile you like! Mix the ingredients thoroughly, ensuring they’re evenly distributed throughout the meat.

Step 4: Stuff the Sausages
Carefully slide the sausage casings onto the grinder’s stuffing tube, and slowly stuff the sausage mixture into the casings. Twist the sausages at 6-inch intervals and tie off the ends with butcher’s twine.
