How to Make Sourdough Focaccia Bread

Ingredients:

  • 1 cup active sourdough starter
  • 3 ½ cups all-purpose flour
  • 1 ¼ cups warm water
  • 2 teaspoons salt
  • 2 tablespoons olive oil (plus extra for drizzling)
  • 1 teaspoon sugar or honey
  • 1 tablespoon fresh rosemary (optional)
  • Flaky sea salt for sprinkling

Instructions:

  1. Activate the Dough: In a bowl, mix the sourdough starter, warm water, and sugar. Stir until combined. Add flour and salt, mixing until you have a sticky dough.
  2. Knead the Dough: Turn the dough onto a floured surface and knead for 5-7 minutes, or use the stretch-and-fold method. Cover the dough and let it rise for 1-2 hours until doubled in size.
  3. Shape the Dough: After the dough has risen, transfer it to an oiled 9x13-inch baking pan. Press gently to spread the dough across the pan. Cover and let it rise for another 1-2 hours.
  4. Preheat the Oven: Preheat your oven to 400°F (200°C).
  5. Add Toppings: Drizzle olive oil over the dough and create dimples with your fingers. Sprinkle with rosemary and flaky sea salt.
  6. Bake the Focaccia: Bake for 20-25 minutes, or until the focaccia is golden brown with crispy edges.
  7. Cool and Serve: Let it cool for a few minutes before slicing and serving. Drizzle with more olive oil for added flavor.
