Ingredients:

  • 1 cup gluten-free oat flour
  • ¾ cup almond flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp pumpkin pie spice
  • ½ cup pumpkin purée
  • ¼ cup maple syrup
  • ¼ cup unsweetened plant milk
  • 2 tbsp coconut oil (melted)
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Line a muffin tin with liners.
  2. Mix dry ingredients in one bowl, wet in another. Combine and stir until just mixed.
  3. Scoop into muffin tins and bake for 18–20 minutes or until a toothpick comes out clean.

Apple Filling:

  • 2 apples, peeled and chopped
  • 1 tbsp maple syrup
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • 1 tsp arrowroot or cornstarch

Instructions:

  1. Preheat oven to 350°F (175°C). Line an 8x8 pan.
  2. Mix crumble ingredients. Press ⅔ into the pan as crust.
  3. Toss apples with filling ingredients. Spread over crust.
  4. Sprinkle the remaining crumble on top.
  5. Bake 30–35 minutes. Cool before slicing.
