1. Pumpkin Spice Muffins

These muffins are made with real pumpkin purée, warming spices, and a touch of maple syrup. They’re perfect for breakfast, snacking, or dessert.
Ingredients:

1 cup gluten-free oat flour

¾ cup almond flour
-
1 tsp baking powder
-
½ tsp baking soda
-
1 tbsp pumpkin pie spice

½ cup pumpkin purée
-
¼ cup maple syrup
-
¼ cup unsweetened plant milk
-
2 tbsp coconut oil (melted)
-
1 tsp vanilla extract
Instructions:

Preheat oven to 350°F (175°C). Line a muffin tin with liners.

Mix dry ingredients in one bowl, wet in another. Combine and stir until just mixed.

Scoop into muffin tins and bake for 18–20 minutes or until a toothpick comes out clean.

½ cup maple syrup

1 tsp vanilla extract

½ tsp baking soda

½ cup chopped pecans

¼ cup almond flour
Instructions:

Preheat oven to 350°F (175°C). Line an 8x8 pan with parchment.

Ingredients:
Crust & Topping:

1½ cups gluten-free rolled oats

¾ cup almond flour

¼ cup coconut sugar

¼ cup coconut oil (melted)

2 tbsp maple syrup

1 tsp cinnamon
Apple Filling:

2 apples, peeled and chopped

1 tbsp maple syrup

½ tsp cinnamon

1 tsp lemon juice
-
1 tsp arrowroot or cornstarch
Instructions:

Preheat oven to 350°F (175°C). Line an 8x8 pan.

Mix crumble ingredients. Press ⅔ into the pan as crust.

Toss apples with filling ingredients. Spread over crust.

Sprinkle the remaining crumble on top.
