Classic Blueberry Muffin Recipe

There’s nothing quite like a warm blueberry muffin straight from the oven. This recipe delivers the perfect bakery-style muffin: golden on top, tender inside, and bursting with berries in every bite.

🧁 Ingredients:

  • 1 ½ cups all-purpose flour
  • ¾ cup sugar (or coconut sugar)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup milk (dairy or non-dairy)
  • ⅓ cup neutral oil (like canola or melted coconut oil)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups fresh or frozen blueberries
  • 1 tbsp flour (for tossing blueberries)

🥣 Instructions:

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease lightly.

  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. In another bowl, whisk together milk, oil, eggs, and vanilla.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined (don’t overmix).

  5. Toss the blueberries with 1 tbsp flour (this keeps them from sinking), then gently fold them into the batter.

  6. Spoon batter into muffin cups, filling each about ¾ full.

  7. Optional: Sprinkle tops with a bit of sugar for a crunchy topping.

  8. Bake for 18–22 minutes, or until golden brown and a toothpick comes out clean.

  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

💡 Tips:

  • Frozen blueberries? Use them straight from the freezer — no need to thaw.

  • Make it bakery-style: Bake at 425°F for the first 5 minutes, then reduce to 350°F for the remaining time for a taller muffin top.

To make them vegan & GF:

  • Use 1:1 gluten-free flour blend

  • Replace eggs with 2 flax eggs (2 tbsp ground flax + 6 tbsp water, let sit 5 min)

  • Use plant-based milk (almond, oat, soy)

  • Choose coconut or avocado oil
