Recipe: Farmers Market Style Breakfast Sandwich
Makes: 4 sandwiches
Prep Time: 10 mins
Cook Time: 15 mins
Total Time: 25 mins

Ingredients:

  • 4 English muffins, halved and toasted
  • 4 large eggs
  • 4 slices of cheese (cheddar, Swiss, or your favorite)
  • 8 slices of crispy bacon (or sausage patties)
  • 1 ripe avocado, sliced
  • 1 medium tomato, sliced
  • Fresh lettuce or arugula
  • 1 tbsp olive oil or butter (for cooking)
  • Salt and pepper, to taste
  • Optional: homemade jam or hot sauce for a sweet/spicy kick

Instructions:

Step 1: Cook the Bacon (or Sausage)
In a skillet over medium heat, cook the bacon until crispy. If you're using sausage, cook the patties according to the package instructions, breaking them into smaller pieces if preferred. Remove from the pan and set aside.

Step 2: Cook the Eggs
In the same skillet, reduce heat to low and add a touch of butter or olive oil. Crack the eggs into the pan and cook to your liking—sunny side up, scrambled, or fried. Season with a pinch of salt and pepper. Add a slice of cheese on top of each egg in the last minute of cooking to allow it to melt.

Step 3: Assemble the Sandwiches
Toast the English muffin halves in a toaster or on the grill for extra crispness. On the bottom half of each muffin, layer a slice of cheese-covered egg, followed by a couple of slices of crispy bacon (or sausage), a few slices of avocado, and a couple of juicy tomato slices. Add fresh lettuce or arugula for a bit of crunch and color.

Step 4: Serve
Top with the other half of the muffin and serve hot. For an extra kick, spread a thin layer of homemade jam or drizzle with a bit of hot sauce.

Serving Tips:
For a more indulgent twist, swap out the English muffin for a fresh baguette or a toasted croissant. You can also add pickled onions or roasted red peppers for extra depth of flavor.

Cooking Tip:
To ensure your eggs cook perfectly every time, use a nonstick skillet and cook over low to medium heat. This helps avoid overcooking the yolks while allowing the cheese to melt beautifully.
