Garlic Butter Baby Potatoes: Crispy, Flavorful & Comforting

These baby potatoes roasted in garlic butter are crispy on the outside, tender inside, and loaded with rich, savory flavor. Perfect as a side for weeknight dinners or special meals alike.

Ingredients

  • 1.5 lbs baby potatoes, halved
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

How to Make It

  1. Prep the potatoes: Use a cutting board with measurement guides to halve the baby potatoes evenly, ensuring they cook uniformly. Wash and dry them thoroughly.

  2. Make the garlic butter: In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté gently for 1–2 minutes until fragrant but not browned, allowing the garlic to infuse the butter.

  3. Coat the potatoes: Place the halved potatoes in a large mixing bowl. Pour the garlic butter over them and toss well to coat every piece. Season generously with salt and pepper.

  4. Arrange for roasting: Spread the potatoes cut-side down on a baking sheet (lined with parchment paper or a non-stick baking mat for easy cleanup). This helps achieve that crispy golden crust.

  5. Roast: Place the baking sheet in an oven preheated to 400°F (200°C). Roast for 25–30 minutes, flipping the potatoes halfway through to ensure even browning on all sides. They should be tender when pierced with a fork and beautifully caramelized.

  6. Finish and serve: Remove from the oven and transfer to a serving dish. Sprinkle with freshly chopped parsley for a pop of color and freshness. Serve immediately while warm.
