📝 Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp crushed red pepper flakes (optional)
  • 1 (6 oz) can tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 8–10 lasagna noodles, broken into bite-sized pieces
  • Salt & pepper to taste

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan
  • Fresh basil or parsley (optional)

👩🍳 Instructions

1. Brown the Meat

In a large pasta pot, cook the ground meat over medium heat until browned. Drain excess fat.

2. Add Flavor

Add diced onion and cook for 3–4 minutes. Stir in garlic, oregano, and red pepper flakes. Cook 1 minute more.

3. Stir in Tomato Paste

Mix in the tomato paste and cook for another minute to build flavor.

4. Add Tomatoes & Broth

Pour in crushed tomatoes and broth. Stir well and bring to a boil.

5. Add Pasta

Break lasagna noodles into bite-sized pieces and stir them in. Simmer for 12–15 minutes, stirring occasionally, until pasta is tender.

6. Season & Serve

Taste and adjust seasoning with salt and pepper. Ladle soup into bowls and top with ricotta, mozzarella, Parmesan, and a sprinkle of fresh herbs.
