Here’s a simple recipe to make cottage cheese from scratch, using just a few ingredients and basic kitchen tools.

Ingredients:

  • 4 cups whole milk
  • 1 ½ tbsp white vinegar or lemon juice
  • ½ tsp salt
  • ½ cup heavy cream (optional, for creamier texture)

Instructions:

  1. Heat the Milk: In a large pot, heat the milk over medium heat. Stir occasionally to prevent it from scorching. Use a thermometer to heat the milk to about 120°F (49°C).

  2. Add the Acid: Once the milk reaches temperature, add the vinegar or lemon juice. Stir gently and let the milk sit for 5-10 minutes as curds form.

  3. Cut the Curds: Using a slotted spoon, gently cut the curds into small pieces to help release more whey. Let it sit for another 10 minutes.

  4. Drain the Curds: Place a cheesecloth or fine strainer over a large bowl and carefully pour the curds and whey into it. Allow the curds to drain for 5-10 minutes, or longer if you want a drier texture.

  5. Rinse and Season: Rinse the curds under cold water to stop the cooking process and remove any excess whey. Once rinsed, sprinkle with salt, and if desired, stir in heavy cream for a richer texture.

  6. Serve: Your fresh, homemade cottage cheese is ready to enjoy! Use it in salads, on toast, or as a side dish.
