Once you make your own, you'll love the fresh taste and satisfying crunch that homemade dill pickles deliver.

Classic Homemade Dill Pickles

This easy refrigerator dill pickle recipe produces crisp, flavorful pickles that are ready to enjoy after just a day or two of chilling.

Ingredients

  • 6 small pickling cucumbers
  • 2 cups water
  • 1 cup white vinegar
  • 1 tbsp kosher salt
  • 3 cloves garlic, peeled
  • 4–5 fresh dill sprigs
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • ½ tsp red pepper flakes (optional)

Instructions

1. Prepare the Cucumbers

Wash the cucumbers thoroughly and trim a thin slice from the blossom end to help maintain their crisp texture. Slice into spears or rounds, or leave them whole if they are small.

2. Make the Brine

In a saucepan, combine the water, white vinegar, and kosher salt. Heat over medium heat, stirring until the salt has completely dissolved. Remove from the heat and allow the brine to cool slightly.

3. Fill the Jars

Divide the garlic, fresh dill, peppercorns, mustard seeds, and optional red pepper flakes between clean glass jars. Pack the cucumbers tightly into each jar.

4. Add the Brine

Carefully pour the cooled brine over the cucumbers until they are fully submerged. Seal the jars with tight-fitting lids.

5. Chill & Serve

Refrigerate the pickles for at least 24 hours before enjoying. For the best flavor, allow them to pickle for 48–72 hours. Store in the refrigerator for up to one month.

Why This Recipe Works

Fresh pickling cucumbers provide the perfect crunch, while a simple vinegar brine creates the classic tangy flavor. Garlic and fresh dill infuse every bite with bold, savory notes, and mustard seeds and peppercorns add subtle depth. Because these are refrigerator pickles, they stay crisp and fresh without the need for traditional canning.

Tips for the Best Dill Pickles

  • Choose fresh, firm pickling cucumbers for the crispiest results.
  • Trim the blossom end of each cucumber to help preserve its crunch.
  • Let the pickles rest for at least two days for the best flavor.
  • Keep the cucumbers fully submerged in the brine during storage.
  • Experiment with additional spices like coriander seeds or sliced jalapeños for different flavor variations.
