  • 1 1/2 cups sourdough starter
  • 1 1/2 cups warm water
  • 4 cups all-purpose flour

Instructions:

  1. Make the Dough:
    In a large bowl, combine the sourdough starter, warm water, and sugar. Gradually add flour and salt, stirring until a shaggy dough forms. Knead for 5-7 minutes until smooth and elastic. Use a stand mixer if preferred.

  2. First Rise:
    Cover with plastic wrap or a damp towel. Let the dough rise at room temperature for 4-6 hours, or until doubled in size.

  3. Shape the Dough:
    Turn dough onto a lightly oiled surface, shaping it into a rectangle that fits your 9x13-inch baking pan. Dimple the dough with your fingers and drizzle olive oil over the top.

  4. Second Rise:
    Cover and let rise for another 2-3 hours.

  5. Preheat & Bake:
    Preheat the oven to 450°F (230°C). Add rosemary and coarse salt on top. Bake for 25-30 minutes until golden brown and crispy.

  6. Cool & Serve:
     Let cool slightly, drizzle with more olive oil, and serve.
