  • 3 cups pasta (rotini, penne, or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

For the dressing:

  • 1/3 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste

How to Make It

  1. Cook pasta: Boil pasta according to package instructions until al dente. Drain and rinse under cold water.

  2. Prepare vegetables: While pasta cooks, chop tomatoes, cucumber, bell pepper, red onion, and parsley.

  3. Make dressing: Whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.

  4. Combine: In a large bowl, toss pasta with vegetables, olives, and dressing until evenly coated.

  5. Add cheese and herbs: Gently fold in feta and parsley. Chill for at least 30 minutes before serving for the best flavor.
