Sundried Tomato & Rosemary Focaccia Bread

Sundried Tomato & Rosemary Focaccia Bread

Focaccia is a soft, flavorful Italian bread that’s perfect for dipping, sandwiches, or serving alongside soups and salads. This version features sundried tomatoes and fresh rosemary, creating a savory, aromatic loaf with a golden crust.

Below is a step-by-step guide to making your own focaccia at home.

1. Make the Dough

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 1/2 cups warm water (105–110°F)
  • 1/4 cup olive oil

Instructions

  1. In a large bowl, combine flour, salt, sugar, and yeast.
  2. Add warm water and olive oil.
  3. Mix until a sticky dough forms.
  4. Cover and let rise for 1 hour, or until doubled in size.

Why it Works
The warm water activates the yeast, and the olive oil keeps the dough soft and tender while creating a crispy outer crust.

2. Shape & Add Toppings

Ingredients

  • 1/4 cup olive oil
  • 1/2 cup sundried tomatoes, chopped
  • 2 tbsp fresh rosemary, chopped
  • Sea salt, to taste

Instructions

  1. Pour olive oil into a baking sheet or pan.

  2. Press the risen dough into the pan, stretching it to fit.

  3. Use your fingers to create dimples across the surface.

  4. Press sundried tomatoes and rosemary into the dough.

  5. Drizzle more olive oil on top and sprinkle sea salt.

  6. Let it rest for 20 minutes.

Why it Works
The dimples hold olive oil and toppings, creating pockets of flavor and a soft, airy texture inside.

3. Bake & Finish

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Bake focaccia for 20–25 minutes, or until golden brown.
  3. Let cool slightly before slicing.

Why it Works
High heat helps the crust become crispy while keeping the inside soft and fluffy.

Tool Tip

For the best results, use a large baking sheet or rectangular baking pan to shape and bake your focaccia evenly. A high-quality pan helps the bread bake consistently and develop a golden crust.
