Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes or 6–8 fresh ripe tomatoes, chopped
  • 2 cups vegetable or chicken broth
  • 1 tsp sugar (optional, balances acidity)
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish
  • 1/4 cup cream (optional, for a creamy version)

How to Make It

  1. Sauté aromatics: Heat olive oil in a saucepan over medium heat. Cook the onion until soft, then add the garlic and cook for 1 more minute.

  2. Add tomatoes and broth: Stir in crushed tomatoes and broth. Bring to a simmer.

  3. Season: Add sugar, salt, and pepper. Simmer gently for 15–20 minutes.

  4. Blend: Use an immersion blender or regular blender to puree until smooth.

  5. Finish & serve: Stir in cream if desired. Garnish with fresh herbs and serve hot.
