Vegan Chickpea Salad Sandwich

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 tbsp vegan mayo
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 slices whole grain bread
  • Handful of leafy greens (e.g., spinach or arugula)
  • 1/4 cucumber, thinly sliced

Instructions:

  1. In a bowl, mash the chickpeas with a fork or potato masher until they are mostly broken up but still slightly chunky. (A food processor works great here if you want a finer texture!)

  2. Add vegan mayo, Dijon mustard, lemon juice, garlic powder, salt, and pepper to the mashed chickpeas. Stir until well combined.

  3. Toast your bread slices lightly for extra crunch. A cast iron skillet works wonders to get the perfect toast.

  4. Spread the chickpea mixture evenly on one slice of bread.

  5. Layer the sandwich with greens and cucumber slices, then top with the other slice of bread.

  6. Cut in half and enjoy!
